Breakfast Egg and Green Chili Bake



This Breakfast 'omelet' is almost like a crustless quiche except it comes out much lighter in texture.  Serve it with fresh fruit or breakfast potatoes, or both!!   It's a great dish to impress the in-laws or your friends.

  Amount  Measure       Ingredient -- Preparation Method

  10           large             eggs
 1/2           cup              flour  (use coconut or almond flour to make this dish primal)
   1         teaspoon        baking powder
   1         teaspoon        salt
   2           cups             cottage cheese
   4           cups             shredded monterey jack cheese -- (1 Lb)
 1/2          cup               butter -- melted
   2       4 oz. cans        diced green chilis

Preheat oven to 350º .

1.  In mixing bowl beat eggs until light and lemon colored.   Add flour, baking powder, salt, cottage cheese, jack cheese and butter.  Mix til smooth.  Stir in chilis.

2. Pour mixture into well buttered 9 x 13 glass casserole pan. 

Bake at 350º for 35 minutes or until top is golden brown and center appears to be firm.


You can half this recipe and it will make an 8 x 8  pan size.
If you like more zip....use pepper jack cheese.

This is wonderful served with salsa.
