Here's another great way to use up all that Summer zucchini.   
Even in the winter this is a great appetizer for Holiday get togethers and part
Zucchini Appetizersies.  


They are a bit like a crustless quiche.  They are finger food so they are easy to eat. 
They are easy to make too!!

  Amount        Measure       Ingredient -- Preparation Method
   --------           ------------       --------------------------------
   3                  cups             zucchini -- shredded or very thinley sliced
   1                   cup               biscuit baking mix
  1/2                cup               onion -- minced
  1/2                cup               grated parmesan cheese
  1/4                cup               fresh basil -- minced
   3               tablespoons  fresh  parsley -- minced
 1/2             teaspoon        seasoned salt
 1/2             teaspoon        marjoram
 1/4            teaspoon        black pepper
   2                 clove            garlic -- chopped
  1/2               cup              canola oil
   4                large             eggs -- beaten

Combine ingredients in a large bowl, mix thoroughly.    Put evenly into a  well greased 13 x 9 x 2  inch baking pan.  Bake at 350  for 25-30 minutes.   If the mix feels firm and done but it is not brown, turn on the broiler for a couple of minutes so that the tops brown nicely.    Cool.   Cut into cubes to serve.     May be served at room temperature or warm.
