Ancho-Chipotle Sauce

   3          tablespoons     olive oil
   1          large                red bell pepper
   1          large                dried ancho chili, stemmed seeded -- chopped
   2          cloves              garlic -- chopped
   1         medium            onion -- chopped
   1           cup                 apple cider
   2 1/2    cups                chicken stock
   3         tablespoons     honey
   2         tablespoons     ground expresso beans
   1         cup                  beef stock
   2         tablespoons     chipotle pepper in adobo sauce -- chopped
   1        cup                   fresh cilantro -- chopped  (optional)

Heat oil in heavy saucepan, add bell pepper, ancho, garlic, onion. 
Saute till soft., about 8 minutes. 
Add apple cider, simmer 5 minutes. 
Add chicken stock, honey,reduce to 1 1/2 cups, about 15 minutes. 
Add expresso beans, beef stock and chipotle. 
Boil to reduce to 2 1/2 cups. 
Cool. 
Puree in blender and strain through fine sieve.  
Mix in cilantro.

Serve with lamb, pork, chicken.
