This lunch special was a huge hit.   It combines good things into one neat package.   Meatloaf, spinach, Italian Stuffed Meatloafcheese and marinara, an Italian feast on a plate.

         2      pounds        ground beef -- lean
         1      large            onion -- chopped very fine
      1/4      cup              olives -- chopped
         2      cups            Italian bread crumbs
        1      teaspoon     mustard
        1      teaspoon     horseradish
        1      tablespoon    Italian Seasoning
        1      tablespoon   Worcestershire sauce
        3      large            egg -- beaten
     1/2      cup              ketchup
         1    teaspoon     salt
         1    teaspoon     black pepper


   3      cups          mozarella cheese -- shredded
   1      pound        baby spinach blanched and squeezed dry. (or use one pound of frozen chopped spinach thawed and drained of all moisture)

Use a bowl and a whisk to beat together the eggs, mustard, horseradish,  ketchup,  salt,  pepper,  Italian seasoning and Worchestershire.  Add to  meatloaf ingredients and mix  thoroughly.      On waxed paper pat the meatloaf mix into a rectangle about 1/2" thick.

Place the spinach evenly all over the meatloaf.    Place the cheese evenly all over the spinach.

Using the waxed paper to help, roll the meatloaf up on the long side until you have a meatloaf
log with the seam side down.    Seal the ends together so the filling doesn't ooze out.

Place on greased baking pan and top with small bit of ketchup.   Bake at 350 for  40-50 minutes till
just done and no pink remains.  Let rest before slicing.

Put a pool of marinara sauce on the plate and lay a slice of meatloaf in the sauce to serve.  The spiral looks so pretty with the green, red and white colors of the meatloaf and the sauce.  The colors of the Italian flag.
