I love pizza.   I love calzones.  I love flatbread.  This dough can be used for pizza, for calzones, or for herbed Pizza Doughflatbread.   It's not hard to make and it bakes up nicely.

   3              packages      active baker's yeast
   1              teaspoon      sugar
   3              cups               warm water
   7 1/2       cups               flour
   3             teaspoons     salt
   9             tablespoons   olive oil

1.  Proof each packet of the yeast with 1/3 teaspoon of  the sugar in 1 cup of warm water for three minutes or untill foamy.  You will have three seperate containers of yeast.

2.  In a food processor combine 2 cups of the flour and  1 teaspoon salt.  With the motor running,  pour in one proofed yeast mixture,  3 tablespoons olive oil and 1/4 cup water down the feed tube and process the mixture untill it forms a ball, adding more flour a little at a time if the dough is too wet.  The dough should pull itself into a ball and clean off the walls of the processsor.  Repeat this process three times till you have used up all ingredients.    

Place the three balls of dough in a large oiled bowl, turning the dough to coat evenly with the oil.  Cover with plastic wrap and let rise in a warm place for 1 hour or till doubled in bulk.

 Makes enough dough for three 14 inch pizzas or 10-12 calzones.
