Crostini con Langostino (Lobster Toast)
Hot appetizers are always my favorites and this one is rich and luscious. Depending on your budget, you can substitute crab or even surimi for the lobster in this recipe. It would even work well with shrimp or any seafood. Make a lot, because they won't last long.
1 cup chopped fresh lobster meat
1/2 cup shredded fresh mozzarella
1/3 cup tomato strips packed with fresh basil
2 tablespoons melted butter
2 tablespoons minced fresh basil
2 teaspoons minced fresh garlic
16 pieces of Italian or French bread sliced into 3/8" thick rounds
Mix lobster, cheese, tomatoes, butter, basil and garlic together. Generously spread on to bread slices. Put on ungreased baking sheet and bake at 400º for 8-10 minutes till the bread slices are hot and crispy.
