  Amount  Measure       Ingredient -- Preparation Method

     3/4      pound         large shrimp -- cooked and peeled
     1/2      pound         fresh lump crabmeat -- cooked
     1/2      pound         lobster meat -- cooked
     1/4      cup             carrot  -- finely diced
     1/4      cup             celery -- finely diced
      1      tablespoon    capers -- drained
      1      teaspoon      jalapeno -- finely minced (seed and take out the white vein)
      2      tablespoons   cilantro -- finely chopped
     1/3      cup           extra virgin olive oil
      3      tablespoons   fresh lemon juice
                        salt and fresh ground pepper to taste

1. Halve shrimp,  pick over crabmeat and leave in large lumps, cut lobster into 1/2 inch pieces and place in bowl with carrot celery and capers.  Gently fold together with spatula, not breaking up  the crab.

2.  Add the jalapeno and cilantro and carefully fold in the olive oil and lemon juice.

Adjust seasonings.    Chill thoroughly.

Serve in martini glasses or champagne flat glasses or margarita glasses.
