Pineapple Au Gratin
This is one of the all time great side dishes for Holiday meals. It's one of my favorites. The combination sounds weird but the flavor is out of this world. It's so simple to make too and can bake along with other dishes in the oven.

2 large cans pineapple chunks in juice
6 tablespoons flour
1 cup brown sugar -- not packed
2 cups shredded cheddar cheese
1 stick butter -- melted
1 sleeve Ritz Crackers -- crushed to crumbs
1. Drain pineapple and keep juice for other things. Put pineapple in large bowl.
2. In bowl with pineapple add flour, brown sugar and cheddar cheese, stir to mix well.
( Leave just enough juice with the pineapple so that these ingredients mush up together nicely).
3. Put the pineapple mixture into a well buttered casserole dish. Top with crushed Ritz Crackers and drizzle all over with the melted butter. Here's a tip: Put the Ritz crackers in a zip lock bag and run your rolling pin over them a couple of times. Easy peasy.
4. Bake in a small casserole dish at 450 for 20 minutes.
