This is a simple chicken and rice soup. I really liked to use the mixed rice in this soup because it gives it a richer flavor than plain white rice and wild rice is good but it's really crunchy all by itself. This is a homey, hearty soup that is comforting.

2 small carrots -- sliced
2 small celery -- stalks chopped
1 small onion -- chopped
6 ounces mushrooms -- sliced
2 tablespoons parsley -- chopped
1/2 teaspoon black pepper
3/4 cup rice(white, long grain, brown) -- mixed
1/2 pound chicken meat or leftover fowl
1/2 cup frozen petite peas
1 gallon chicken stock
1. Saute carrots, celery, onion and mushrooms in a little butter.
2. Add stock, chopped chicken and parsley and bring to a boil. Simmer.
3. Add rice and simmer till rice is tender.
4. Add frozen peas and simmer just a bit.
Taste for salt and pepper.
