This is a really savory and light chicken soup. The spinach and basil give it a little different flavor from your standard chicken soup. It was always well received by our guests.
This is a great soup to use up leftover poultry like turkey. If you don't want to start from scratch and boil a chicken and pick the meat, grab a roased chicken from the grocery store. You can add things to this soup like a shaped pasta or orzo if you want to make it a bit heartier.

Amount Measure Ingredient -- Preparation Method

1 large onions -- chopped
2 stalks celery -- chopped
6 ounces frozen spinach
1 package frozen Italian Vegetables
2 quarts chicken stock
chopped cooked chicken
2 tablespoons dried parsley
1 tablespoon dried basil
2 medium potatoes -- cubed
1. Saute onion and celery in butter till translucent.
2. Add stock and potatoes. Bring to a boil and then simmer till potatoes are almost done.
3. Add Frozen Italian Vegetables, and frozen spinach, raise heat to almost boil, then turn down and simmer for 10 minutes.
4. Add parsley, basil, and chicken. Simmer.
Taste for seasoning. Add black pepper and salt to taste.
