This pesto is yummy as a spread for crostini, as a sandwich spread, and as a wonderful pasta sauce.
It is a great pizza sauce as well, something a bit different tasting.

2 cups oil packed sun dried tomatoes
2 cup pitted black olives
5 cloves garlic
4 cups packed fresh parsley
1 1/2 cups pine nuts
1 cup extra virgin olive oil
Put all ingredients into a food processor and pulse till it becomes a choppy paste.
Store in refrigerator.
If you are using it for a pasta sauce, cook your spaghetti or other pasta and drain, but not too well, leave the pasta fairly wet.
Spoon the pesto in the hot pasta and toss till well coated. Serve topped with plenty of Parmesan.
