Sitara's Basil Pesto
I wish I could bottle the smell of fresh basil. I think they should make a perfume that smells like that.
My favorite way to have this pesto is tossed with hot right-out-of-the-pot spaghetti with lots of Parmesan cheese on top...and of course some crusty bread to clean up the plate.

Amount Measure Ingredient -- Preparation Method

3 cups basil leaves -- packed
2 large garlic cloves -- rough chopped
1/2 cup pine nuts
3/4 cup fresh parsley -- packed
3/4 cup Parmesan cheese -- grated
1/2 cup olive oil
1/4 cup butter -- melted
salt to taste
Place all ingredients except salt in food processor. Process by pulsing until you have a fairly smooth paste with just a bit of chunkiness. Taste for salt and add if you need it.
Serve this pesto as a spread for crostini, a stuffing for chicken breasts, a sauce for hot pasta, etc.etc.etc. There are as many ways to use it as your imagination can come up with.
For a pesto cream sauce whisk pesto with heavy cream or half and half and warm gently, then toss with your pasta or use as a sauce over chicken, etc.
