Sitara's Hot Bacon Dressing
I don't care how much people whine about cholesterol, everybody loves bacon.....even vegetarians love bacon, they eat a fake vegetarian version of it!!!
There's not much better in the salad universe than a fresh spinach salad with a hot bacon dressing.

Amount Measure Ingredient -- Preparation Method

20 slices bacon -- chopped (if you want to use turkey or veggie bacon, have at it)
1 cup red wine vinegar
3/4 cup honey
1/2 cup lemon juice
1 cup red onion -- chopped small
1/2 cup green onion -- chopped small
salt and pepper -- to taste
1. Fry bacon till barely crisp. (If you decide to use turkey bacon or a "fake" bacon add some olive oil to your pan to replace the fat that would render from regular bacon)
2. Add red onion to the skillet and saute till soft.
3. Add honey and lemon juice. Stir till honey dissolves.
4. Take a step back and add the red wine vinegar.......the fumes will open up your head!! Bring to a boil and cook on a slow rolling boil for a couple of minutes. Remove the skillet from the heat, turn the burner down to warm. Keep the dressing warm till service. Whisk again before you serve to keep it all incorporated.
Taste for seasonings and balance of sweet to sour.
If you don't use all of this dressing in one sitting, be sure it is well stirred and blended and then refrigerate the leftovers. Warm it up gently in a saucepan or skillet for the next salad.
