Who doesn't like Waldorf Salad? The addition of chicken makes it an entree salad and the tarragon is wonderful.

1 pound chicken -- cooked and cubed
1 cup walnuts -- toasted
1 cup celery -- sliced
1 cup green onion -- chopped
1 cup red grapes -- bunch, halved
3 large apples -- cubed
DRESSING
1 cup mayonnaise
1/4 cup tarragon vinegar
2 tablespoons chopped fresh tarragon
salt and pepper to taste
1. spread walnuts on baking sheet and toast about 3-5 minutes in 350º oven till just
beginning to brown....don't over toast, they will be bitter.
2. Whisk dressing ingredients and chill thoroughly.
3. Mix salad ingredients in a large bowl and chill. Toss with dressing right before
service. Serve on a lettuce leaf or a bed of fresh baby geens.
