This is a slightly chunky dip that is really good with tortilla chips and potato chips and crackers. You can make it as spicy as you like. The Tony Chachere's seasoning adds a layer of flavor that's hard to beat.
1 lb shrimp boiled in shrimp boil, peeled and deveined
1 stalk celery, diced fine
1/3 cup sour cream
1 8 oz pkg cream cheese (softened)
1 tablespoon ketchup
1/2 teaspoon horseradish
4 green onions chopped fine
2 Tbs dry sherry
2 Tbs fresh lemon juice
Tobasco to taste for 'heat'
Tony Chachere's to taste
In your processor put shrimp, sour cream, cream cheese, ketchup, horseradish sherry, lemon juice and most of the green onions. Do not put celery in yet.
Pulse till blended but just a tiny bit chunky.
Pour out into a mixing bowl and mix in the finely diced celery, Tabasco and Tony Chachere's seasoning to taste.
Serve with chips or crackers.
