This salsa can be as mild or as hot and spicy as you like. It's really yummy.
Cranberries are really good for you, they are high in vitamin c, plus they taste amazing. Cranberries are not just for Thanksgiving diner anymore!

1 bag fresh cranberries
1 clove garlic
1 large jalapeno
4 tablespoons cilantro -- minced
3 large green onion -- minced
3 large limes -- juiced
1/2 cup sugar
salt and pepper to taste
1.Boil cranberries for ONE MINUTE in 1 quart of water. Drain well.
2. Mince the garlic. Seed and mince the Jalapeno.
3. Combine in a bowl with the chopped cilantro, green onion and cranberries. Mix by hand. Mash some of the cranberries to a pulp leaving most whole.
4. Add lime juice, sugar, salt and pepper and mix well.
This salsa is a little sweet, a bit sour, and very spicy.
It's wonderful as a topping for crostini with melted brie as shown in the picture, as an accompaniment for a Holiday Meal, as a component in a Mexican Dish. Its flavors go wonderfully with a lot of dishes.
