The special thing about this tomato sauce is the cinnamon and honey. These 'sweet' flavors combined with the olives, garlic and mint give this Greek style tomato sauce a deliciously different flavor. It's wonderful on pasta or baked on chicken as in the photo. This is a good sauce to play with.
We served it as a lunch special with spaghetti topped with grilled chicken and this sauce.

2 tablespoons extra virgin olive oil
1 small onion -- minced
1 can crushed tomatoes
1 can tomato paste
1/2 cup honey
1/2 cup red wine
3 cloves garlic -- minced
1 stick cinnamon
1/2 cup Greek olives -- pitted and drained
1 tablespoon fresh mint -- chopped
1. Saute onion in olive oil till translucent.
2. Add all ingredients except olives and mint.
3. Simmer, uncovered, for one hour. Remove the cinnamon stick.
4. Add chopped mint and olives to finish the sauce and simmer for about 5 minutes more.
