This is a great way to use up zucchini and even your kids will love it!!

Amount Measure Ingredient -- Preparation Method

1 large carrot -- shredded
2 large zucchini -- shredded
2 cloves garlic -- minced
4 large green onion -- chopped fine
2 cups bread crumbs -- or cracker crumbs
2 large egg -- beaten
2 teaspoons Natures Seasons or Veg Sal or your favorite seasoned salt.
1/2 teaspoon black pepper
1/4 cup Parmesan cheese -- grated

1/2 cup sweet corn kernels
Use food processor or grater to shred zucchini, let stand for about 20 minutes and then squeeze as much moisture as possible out of it.
Use food processor to grind, shred or chop each ingredient individually. Or sharpen your knife skills!!!
Combine all ingredients in a large bowl bowl and mix well. If patties are too moist add bread crumbs, if they are too dry add a bit of water. Let stand for a few minutes for the bread crumbs to soak up all the moisture and hold the patties together. Form into patties and fry in a small amount of olive oil with a pat of butter till golden brown on both sides.
You can form these patties small as an appetizer or large as an entree or medium as a side dish.
Serve with salsa or the Veggie Dip & Dill Sauce.
