This baked stuffed salmon is actually fairly easy to make but it looks really impressive. We served this salmon dish as a lunch special and also when we did some dinner catering. The stuffing and breadcrumbs keep the salmon very moist and tender.

10 ounces fresh spinach
4 ounces cream cheese
1/2 cup mascarpone cheese
pinch nutmeg
8 8oz salmon fillet -- thick with skin on
olive oil
3 cups bread crumbs
1/2 cup melted butter
1/2 cup grated Parmesan cheese
1. Cook spinach in boiling water till just wilted. Rinse with cold water and squeeze as dry as possible.
Chop spinach and put in bowl to mix with cream cheese, mascarpone and nutmeg.
Season to taste with salt and pepper.
2. Place salmon fillets in oiled baking pan with skin side down.
Cut slit down center of each salmon fillet lengthwise and stuff with spinach mixture.
3. Mix breadcrumbs with melted butter and Parmesan and press on top and sides of salmon.
4. Bake in 450 oven till salmon is opaque in the center and the breadcrumbs are golden brown on top.
