This is the Remoulade sauce that I loved at Commander's Palace in New Orleans. It is served in their famous Shrimp Remoulade. Use big, fat boiled shrimp for this recipe. I also served this remoulade with crab cakes and even sometimes as a sandwich spread.

6 cloves garlic
3 stalks celery
2 tbsps white vinegar
1/2 cup ketchup
1/4 cup prepared horseradish
1/4 cup mustard -- yellow
1/4 cup mustard -- creole or stone ground
2 tbsps paprika -- mild
2 tbsps Worcestershire sauce
1 tbsp Tabasco sauce -- to taste
1 tsp cayenne
2 1/2 cups mayonnaise
6 green onion -- chopped
salt and pepper -- to taste
PROCESS first 12 ingredients in food processor till almost smooth, you want tiny chunks. Add mayonnaise and process till smooth. Mix in green onions salt and pepper. Cover and chill till ready to serve.
Serve with boiled shrimp. Delicious on sandwiches, chicken, crab cakes or salad.
