This is the biggest favorite of all the lunch salads we served at Hizzoners. The combination of the chutney and curry in the dressing is delicious. It will be a big favorite with your guests too.

Amount Measure Ingredient -- Preparation Method

DRESSING
1 cup plain yogurt
1/2 cup real mayonnaise
1/2 jar Major Grey Chutney
1/2 small jalapeno -- seeded and minced
1 teaspoon green chili paste
1 tablespoon curry powder
1 dash cayenne
Mix well and chill.
SALAD
1 quart cooked chicken -- coarsely chopped
2 cups seedless red grapes -- halved
1 cup celery -- sliced
1/4 small red onion -- quartered and sliced thin
1/2 cup cashews
2 each apple crisp juicy -- cubed
1/2 small bunch cilantro -- chopped
1/2 cup shredded coconut
1 medium cantaloupe -- or honeydew melon
1. make dressing and chill.
2. In large bowl place all salad ingredients and chill
3. Mix just enough salad dressing in to coat everything just before serving.
4. Serve in a wedge of melon on a lettuce leaf.
