The first time I was introduced to walnut sauce I thought ..."ewww", walnuts? Boy, was I wrong. This is such a delicious sauce, simple and rich tasting. It's easy to make and your family or guests will think you've been to chef school!!

3 cups walnut pieces (small) -- lightly toasted
2 small bay leaf
4 ounces parmesan cheese -- grated
4 cups half and half
4 cloves garlic -- minced
3 teaspoons finely chopped marjoram & sage
dash nutmeg
spinach fetuccini, penne pasta, pappardele, or any good shaped
gourmet pasta.
1. Toast walnut pieces by tossing them in a dry skillet over medium heat for a couple of minutes.
Don't over toast or they will taste bitter.
2. In heavy sauce pot heat half and half till just starting to boil, stir in garlic, herbs and walnuts. Simmer till slightly thickened. Stir in parmesan cheese. Salt and white pepper to taste.
Toss with cooked shaped pasta or top fettuccini with sauce. Top with shredded parmesan.
