This is one of the better ways to do a pork tenderloin, in my humble opinion. It's really hard to beat anything that is marinated in Jack Daniels whiskey!!
¼ cup Jack Daniel's® Tennessee Whiskey
1 T. Worcestershire Sauce
¼ cup soy sauce
½ cup brown sugar
3 large cloves of garlic, crushed
2 T. Dijon mustard
1/4 cup olive oil
2 pounds pork tenderloin
1 teaspoon ginger
Combine all ingredients in a zip lock bag and marinate the tenderloin in the refrigerator at least overnight or for at least 8 hours or more to insure that the flavors permeate the tenderloin.
Remove the tenderloin from the marinade and grill until internal temperature is about 160 degrees (or whatever is appropriate for pork for you!).
If the weather is icky, you can also brown the tenderloin on the stove, and then finish it in a 400 degree oven till the proper internal temperature is reached.
While the tenderloin is cooking bring the marinade to a boil in a sauce pan. Boil for 2 minutes at least. Then add the following:
1 cup beef stock
1/2 cup strong coffee
1/4 cup bacon bits.
Boil the sauce vigorously to reduce it by about a third and serve with the tenderloin.
This is so good it will make you want to "slap your mama" !!
If you want to be really down home, serve the tenderloin on top of some cheese and garlic grits with the sauce poured over all.
