These spinach calzones were always a big hit when I took the trouble to make them. Be sure to try my pizza dough recipe, it's easy and it's really good.

1 pound ricotta cheese
2 cloves garlic -- crushed
1/2 cup onion -- minced
1 pound frozen chopped spinach, thawed and squeezed dry
2 cups packed shredded mozzarella
1/2 cup parmesan cheese -- grated
salt & pepper to taste
dash of nutmeg
1. Saute onion and garlic in butter till translucent, add spinach, salt and
pepper and nutmeg. place in bowl and add rest of ingredients, mixing well.
2. (Use Sitara's Pizza dough recipie). Roll out your pizza dough and cut out circles about 4 inches in diameter. Or you can buy pre made pizza dough rounds and use them if you are in a hurry.
3. Fill pizza dough circles with 1/2-3/4 cup mixture. Fold over and seal by moistening with water. Crimp edges with fork. Prick top with a fork and cut a couple of slits for the steam to escape.
4. Bake on oiled sheet at 450 15-20 minutes till crisp and lightly brown. Brush with melted butter as calzones leave the oven.
Serve with a good savory red marinara sauce.
