This is a rich chocolate cake that has the surprise addition of cinnamon and cloves which gives it an exotic flavor. Everyone will love this cake.
You can bake it in an oblong pan in one layer or do in a loaf cake pan or even do square 9" cake pans.....depending on how you wish to serve it.
1 cup butter or shortening
2 1/2 cups sugar
2 eggs
8 Tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon good vanilla extract
1 teaspoon salt
2 cups buttermilk
3 cups cake flour
1. In your mixer cream the butter and 1 1/2 cups of the sugar and beat till creamy and fluffy.
2. Add the eggs one at a time beating well after each.
3. Mix the rest of the sugar, cocoa and spices together and add to the beaten mix and beat again.
4. Alternating, add the buttermilk and the flour a little of each at a time and beat till the batter is completely creamy and fluffy.
Bake in prepared pan(s) at 350 for about 40 minutes or till the toothpick test comes out clean.
Frosting:
1/2 cup milk
1/2 cup butter
6 oz. semi sweet chocolate morsels
1 tsp vanilla
2 1/2 cups sifted confectioners sugar.
In a sauce pan combine the milk and butter and bring to a boil, stirring. Remove from heat and add the semi sweet chocolate morsels and vanilla. Beat vigorously till smooth.
Gradually beat in the confectioners sugar till thick enough to spread on the cake.
