There are two schools of thought about brownies, with nuts or without nuts. I love them either way, but if you are a no nut person, leave the pecans out. If you are really a nut person you can add even more nuts…even a variety of nuts like some cashews, pecans, walnuts, pine nuts, etc. In fact one of the best brownies I ever had was a 'five nut brownie".
3/4 cup cocoa
1/2 teaspoon baking soda
1 cup butter
1 cup boiling water
2 cups sugar
2 large eggs
1 1/3 cups flour
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup chopped pecans
2 cups semisweet chocolate chips
1. In mixer bowl place cocoa, soda, butter sugar, eggs, vanilla, salt, beat
till mixed.
2. Add hot water and beat.
3. Add flour and beat till just mixed well.
4. Add nuts and chocolate chips and fold in.
Spray a 9 x 13 baking pan on the bottom and sides. DO NOT FLOUR PAN.
Pour in brownie mix.
Bake 25-30 minutes at 350. Brownies will still seem moist. Do not overbake.
When brownies are done COVER WITH FOIL IMMEDIATELY . Cool on rack with foil on top. This keeps the brownies moist and chewy.
After the brownies are cool. Cut into squares.
You can put frosting on these but they really don't need it.
Here's a great brownie dessert. Warm a brownie in the microwave, place in a bowl with a scoop of really good vanilla ice cream on top. Pour hot fudge sauce or chocolate sauce over the top along with a shot of Kahlua and top with whipped cream or Chantilly cream. Heaven.
